Fruity Couscous Salad

Serves 4

You will need:

Lamb Brand Couscous 1 cup, uncooked

Lamb Brand Shredded Coconut 4 tbsp

Lamb Brand Pistachios 4 tbsp, chopped

Lamb Brand Curry Powder 1 tbsp

Lamb Brand Black Raisins 1/2 cup

Lamb Brand Red Almonds, sliced

Lamb Brand Black Pepper 1/2 tsp

Lamb Brand Table Salt 1/4 tsp

Life Dried Apricots 1/2 cup, chopped

Garlic Cloves 2, chopped

Water 2 cups

Olive Oil 2 tbsp

Green Onion 1/2 cup, chopped

All you have to do is:

1. Cook couscous as per packet instructions and stir in garlic, olive oil, apricots, raisins, curry powder, pepper and salt.  

2. Cover with a lid and allow it to stand for 5 minutes.  

3. Garnish with pistachios, coconut, almonds and onions.
