Coconut Biscuits

Try out this delicious traditional baking recipe, using a large variety of different Lamb Brand products!

All you will need is:

Lamb Brand Plain Flour, 300g

Lamb Brand Coconut, 300g

Lamb Brand White Sugar, 200g

Lamb Brand Salt, pinch

Lamb Brand Icing Sugar

Rayner’s Vanilla Essence Butter, 200g

Eggs, 4

Fresh squeezed lemons, 2

All you have to do is:

  1. Cream the butter and the sugar in a mixer. 
  2. Add the eggs one by one and carry on mixing. 
  3. Sift the flour and add the coconut, lemon zest, vanilla and salt. 
  4. Add flour and coconut mixture, a little bit at a time, to the mixing bowl and use a large metal spoon to fold in gently. 
  5. When the ingredients are mixed well spoon the mixture into a piping bag with a star nozzle. 
  6. Pipe them onto a baking tray prepared with baking paper or non stick spray. 
  7. Bake in a preheated oven at 180C for 10 minutes. 
  8. Allow to cool completely and finish off by sprinkling some icing sugar lightly through a sieve.
